I got an idea to make this “Mexican Pizza” from here. On the site, the author calls it a Tortilla Pizza. I took that and ran with it. It’s basically the same thing, but I added meat and substituted the tomato sauce for refried pinto beans. 

The night before I made this, my family had tacos for dinner. There was still some ground beef from the night before that I used in this. I’d seen the post of the Tortilla pizza’s and decided to try it with the ingredients I had. 

First I refried some canned pinto beans and mashed them to use as a substitute for the sauce.

Then I laid out my tortillas and spread em with the “sauce”, the beans. 

I then added the taco-seasoned ground beef and followed that up with some shredded cheese:

I then added some tomatoes and placed it under the broiler until the cheese melted. 

I sliced it up, pizza style, and enjoyed. It was quite good actually and a healthier alternative to normal pizza since it has less bread and was way less greasy. One thing I might try differently next time is actually baking it longer to get it crispier. Or warming the tortilla up before piling it with all the ingredients just so that it can crisp up better and so that everything is warm.

All in all, it came out pretty well for a spontaneous decision for lunch. It is also a great and quick appetizer. I encourage all to try it out and check out the Kitchen Simplicity blog. There are tons of recipes and ideas that I would love to try out myself!
